Coconut Brownie Protein Ball Recipe

These Coconut Brownie Protein Balls are a great snack, especially on the go. They are great to eat right before a workout or even just to eat throughout the day. Being vegan and gluten-free, they are a healthier substitute for those snacks that are convenient, but not the best in nutrition. Not only are they packed with protein, and can be made with all natural ingredients, they also it keeps you full and energized all day long.
Ingredients:
- ½ cup of Walnuts
- 3 Tbsp of Peanut Butter or Almond Butter
- 2 scoops of any protein powder
- 1 Tbsp of Honey
- 10 Dates
- 1 Tsp of Vanilla
- 2 Tbsp of Cacao Powder (my fav is from Trader Joes)
- Bag of Unsweetened Shredded Coconut
- Pinch of pink sea salt
Recipe
- Start off by soaking the dates in warm water for 5 minutes
- Next, get a food processor or blender
- Combine all ingredients (besides the coconut) in the food processor or blender and keep going until mostly smooth and blended all together
- Lastly, roll into balls and roll them in the coconut
- Refrigerate for 20 minutes before trying them right away
