Pumpkin Spice Protein Pancakes

During quarantine, my parents bought those huge bags of oatmeal from Costco because me my parents and I are obsessed with oatmeal and go through a ton of it. I was getting bored, as we all were during this time, so I decided to transform my oatmeal into pancakes one day because we didn't have pancake batter and I was craving some! From there on out, I now bake these easy pancakes every Sunday and decided to share the recipe since a few of you have asked :)
It's no secret that I love fall, and will try just about anything that has pumpkin in it. So it was fitting for me to transform my typical chocolate oatmeal pancakes into something a little more festive. I am so excited to share this super easy, simple, and healthy recipe with you guys!
What will you need?
- 1/2 cup of oats
- 2 tablespoons of pumpkin pie puree
- 1 scoop of protein powder (I use Cinnamon flavor, but vanilla works!)
- 1/2 tablespoon of baking powder
- 1 banana (frozen or not, both work)
- cinnamon and pumpkin pie spice (a couple dashes, I don't measure whoops)
Step 1:
Making these pancakes is super simple! Place everything mentioned above in a blender and add a tiny bit of water or a milk of your choice. The trick is to add a little and blend, then a little more, blend and so on.
You want the batter to be thick, I wish I could tell you a specific measurement but just add little by little until all the components become one and are THICC. This isn't the cutest photo, but it should look a little something like this :)
Step 2:
Now scoop big spoon sized amount and place them on a greased pan. The pan should be on low-medium heat! Let each side cook for about 3 minutes, it will vary depending on the pan and your stove top so just keep and eye on them.
Flipping them is most definitely the hardest part, and even though I make these every Sunday I still have slight difficulties. A tip would be to just wait until the sides look like they are thickening up, and then if you are able to put the spatula under the pancake without smushing it then go ahead and go in for the flip... and do it quick like ripping of a band-aid.
Step 3:
I make my pancakes smaller, so this recipe typically makes 7-8 pancakes depending on how much of the batter I lick off the spoon lol. Once they are all done, you have a couple of options of how you want to eat them!
For me, I personally choose to always stack them! You can use peanut butter, almond butter, pb2 or really anything to layer between each pancake. This part is important, I encourage you to pick something because it really adds another flavor and also makes it more of a complete meal! If you don't wanna stack them, you can just drizzle all the toppings on normally!
*there is pumpkin butter at Trader Joes that is so bomb and goes amazing with these, so I suggest if you have some to use it!!
The final step:
Pour yourself a cup of coffee, get a side of some yummy berries, drizzle those babies with a ton of maple syrup and EAT UP!

I really hope you guys enjoy this recipe!! Please remember this is just an alternative, nothing wrong with normal pancakes at all! I just enjoy these because I never have pancake batter, and it's an easy and fun way to make your own :)
